Food: homemade CEVICHE

Nothing says summer quite like a good homemade ceviche with an ice cold beer.             But since I don’t have a recipe for beer how about sangria instead?

 Ceviche hails from Equador and Peru and is very popular in Mexico.  It basically consists of pristine raw fish mixed with lime and finished with chillies, onions, tomato, avocado and other fruit.

Ceviche Recipe:

Halibut with jalapeño, tomatoes, cilantro & lime juice. Served with sliced avocados, olives, capers & red onion on the side.

Pour 1 ½ cups of fresh lime juice (from 10 limes) and ½ cup fresh orange juice (from 1 orange) into an 8-inch square baking dish.  Arrange 1 ¼ pounds of firm white fish such as halibut, scallops, rock fish or red snapper fillet, (I used Halibut) skin removed, and cut into ¼ inch slices in a single layer in dish.  Fish should be completely covered in juice.  Cover with plastic wrap and refrigerate until fish is opaque throughout, about four hours.  Drain fish well, discard marinade.

Divide fish among four plates.  In a large bowl combine 1 Cup grape tomatoes (halved), ¼  cup thinly sliced red onion, 1 small jalapeño, seeded and finely chopped, roughly chopped fresh cilantro leaves and 2 Tbsp. extra-virgin olive oil.  Season to taste with coarse salt and ground pepper.  Serve fish topped with salad,  sliced avocado and lime wedges alongside.  Serves 4

For a nice touch you can serve the ceviche in scallop bowls.

Have salsa, guacamole & cut up limes for garnish.  Serve with tortilla chips of your liking.

 

 

The following recipe is from Toronto’s L’Eat Catering – the ultimate Sangria!

fresh & fun fruit garnishes

This is the “best” Sangria recipe I’ve come across. Mixing most of the ingredients and letting them macerate overnight allows the flavors of the fruit and spices to emerge beautifully.  Any dry, full-bodied red wine can be used.

1 bottle full-bodied red wine

Half a stick of cinnamon

3 cloves

1 medium orange, thinly sliced

1 lemon, thinly sliced

1 lime, thinly sliced

5-6 medium sized strawberries, thinly sliced

2 oz. brandy

2 oz. peach schnapps

2 oz. Grand Marnier (or triple sec)

lemon-flavored pop

In a large pitcher, mix all ingredients except the pop and refrigerate overnight.

To serve, fill a glass or wine goblet ¾ full and top with pop.  Serves 10

Scene in the City – and what a scene it was!

ZOMBIE WALK – downtown Vancouver

I’ve only heard about it before this.  Sometimes I feel like a zombie but Saturday was my very first Zombie experience as an observer only.

It began at the Vancouver Art Gallery and continued all the way down Robson Street towards Denman & then along Beach Ave.  What a nightmare!

A zombie walk by definition is an organized public gathering of people who dress up in zombie (monster like) costumes.  And it’s not even Halloween.

Zombie walks have become relatively common in large cities, especially in North America, often becoming annual traditions.   Usually taking place in an urban center, the participants make their way around the city streets and through shopping malls to a public space (or a series of taverns in the case of a zombie pub crawl) in a somewhat orderly fashion.

These guys were weaving through traffic (which slowed down for the event) and scaring tourists on open tour buses.  What an unexpected surprise???

….Alka-Seltzer Effervescent Tablets have a high sodium content and can increase your blood pressure.  Maybe you can try peppermint oil if you have tummy trouble instead.  It’s a natural product and is said to improve symptoms in three out of four people.  At least it’s something to consider.

One thing to another – transform this!

Handy home décor ideas from yard sales.

How do you turn a mirror into a frame?

Pretty easily.  We came across this large rattan frame which was actually a broken mirror at a yard sale.  You never know what you’re going to find! The original owners threw it away because the centre mirror got broken so they had no more use for it.  They told us just to take it.

Not that you will always come across objects like this but if you do then think about what else can be done with them.

It turned out to be exactly what I was looking for to frame my photograph of elephants taken at the Nairobi elephant orphanage – an extraordinary place.  We just had to take it to a framing shop to get matting and glass installed.  Now it has become a unique frame for a special photograph.

 

 

 

While we’re on the subject of yard sales people always get rid of old vases.  You can pick them up for next to nothing so take advantage of that.

Think about it – buy whatever you can and stock up on them.  For your next hostess gift you can bring flowers in a vase. It looks elegant and it’s more convenient for the hostess. She then doesn’t have to search around to find a vase, cut and arrange the flowers while busy doing other things.

Simple and Satisfying

Simply Salmon – a healthy, quick & very tasty salmon dish using pineapple butter.

Remember the herb butter from a few posts back?  Well I’ve been going crazy with processing different kinds.  For this recipe I used pineapple/coconut butter which was delicious on the salmon filet – like something you’d get in the Caribbean.

Tarragon butter on potatoes & steamed spinach

½ cup of unsalted butter, a few tablespoons of organic virgin coconut oil (first liquidated in the microwave for 30 seconds) and a few slices of ripe sweet pineapple.  Blend or put in food processor until smooth.  Refrigerate and freeze what you don’t use right away.

The salmon was cooked on the barbeque with just a bit of olive oil, salt & pepper until near done.  When ready top the salmon with a liberal amount of the butter or to taste and let it melt in on barbeque. You can then add some lime or hot sauce too.

For Omega 3’s – you can eat the crispy skin.

Barbeque tip – put filet on the barbeque skin side down.  The meat will naturally separate from the skin. When it’s done you remove the filet from the heat using a thin metal spatula.  Remove crispy skin remaining on barbeque with a fork.  Eat immediately – It’s delicious and full of vitamins.

Hopefuls lined up yesterday at a downtown dog park for a one chance shot to star in the next Fido Ad.  The open casting call did not discriminate against all breeds or ages and there were many promising specimens in sight but only ONE will be chosen.  Who has what it takes?  Which one of you lucky dogs will be the next Face of Fido?

I’m too nervous to look over at my competition.
