Tuesday is Recipe Day. On Tuesday’s i’m going to post something i’ve personally made which has been worthwhile and very tasty. If you love cooking with herbs you’ll love this one. What do you do with leftover herbs you don’t want to waste or fresh ones from your garden?
HERB BUTTER
8 tbsp. unsalted butter, softened
1/4 cup extra virgin olive oil
1 tbsp. lemon juice
1 tbsp. chopped shallot
1 tsp. chopped garlic
1/4 cup chopped parsley
1 tbsp. each chopped chives, sage, thyme and tarragon

Place all ingredients in a food processor and blend. You can also freeze this butter and use as needed not only on breads but corn, rice & pasta. The recipe can also be varied. For instance I made a cilantro, lime & chili butter for corn on the cob – yummy!
