If you love blueberries and you love lemon then you’re in luck. This is a winning combination of fresh blueberries in season and tangy lemon with a moist coffee cake consistency.
I made this 3 days ago and the few remaining slices still taste great.
Can be served as a breakfast cake, with afternoon tea or coffee or for dessert in the evening warmed up a little with ice cream or frozen yogurt.
RECIPE
½ Cup (125ml) butter (I use unsalted)
1 Cup (250ml) sugar
1 lemon
2 eggs
1 tsp (5ml) vanilla
1 ½ cups (375ml) all purpose flour
1 tsp (5ml) baking powder
½ cup (125ml) milk
1 ½ cups (225g) blueberries
Preheat oven to 350
In a small pot of boiling water immerse the lemon for a minute, then remove and cool. Grate all the zest from lemon then juice the lemon and reserve juice. Immersing in boiling water makes it easier to grate the zest but there’s another trick which I use ***see below.
In a large mixing bowl, cream butter & 1 cup of sugar together. Add lemon zest, eggs and vanilla, beating well. In a smaller bowl, combine your dry ingredients (flour, baking powder and **½ tsp. of salt if desired).
Add half the dry ingredients to the butter mixture, mix to incorporate, then half the milk. Add rest of dry ingredients then rest of milk. Fold in blueberries, and bake in a prepared loaf pan until lightly golden – after 45 minutes check that inserted toothpick comes out clean. May take longer depending on your oven.
After: Mix the lemon juice with some sugar (½ cup max) and spread over loaf while still warm. Pop back into the oven for a few minutes which can be turned off at this point – it will still retain enough heat to bake the glaze into the loaf. Cool before slicing.
**many recipes call for adding a bit of salt. Salt in baking has three uses. It helps preserve the food, helps in flavor and aids in doughs rising. I don’t always find it necessary.
***too many lemons on hand? Did you know that lemons freeze well? You can first grate all the zest which can be frozen separately as once you freeze lemons they juice up really well but they’ll be too soft to grate once they get to room temperature. When you need only the juice then bring just lemon to room temperature & same for the zest. I’ve been doing this for a while now because that way they don’t go bad. Same with limes. Plus you can make ice cube trays.
I love not having to think about that to wear with a top or pants ensemble. Dresses can be dressed up with jewellery, a nice throw & wedge sandals or down with flip flops, a jean vest or jacket. A good basic dress won’t go out of style so you can wear them year after year.
Three classic styles (aka little black dress equivalents):

A nice neutral is never boring because you can wear bright jewellery or scarves with it.
Leopard is a trueclassic – has been for years and will be for years to come.
Keep this one simple. You can still wear it for Fall with leggings & a cardigan.
stripes
Stripes don’t go out of style & are oh…so French(See more photos below). You can take advantage of many sales right now for next year. The great thing is that they take up less space in our closets & are easy to pack for travelling.
Floral & ethnic prints – another summer staple
I’ve had mine over several years & never tire of them as they are put away every fall, forgotton for many months to come and then…… voila!..……seems like new when summer shows up again. Where have you bought onelately?

On average, jumping rope burns about 11 calories per minute. If you crank up the intensity of your jumps, you can burn in the neighborhood of 20 calories per minute. It’s easy to see why this exercise is easily one of the best cardio activities you can try.

This ladder is an antique (which sounds better than just plain “old”) and used as a stand for potted herbs or plants in buckets that were just lying around. You can clean it up but the seasoned patina gives it a vintage look. Drill a hole in the bottom of the bucket so plants can drain.

Fill the inside of bucket with decorative rocks or shells to make it more solid. This is cheaper, more imaginative & more attractive than an original weighted stand.
You can double it for your Christmas tree stand.
Bamboo Ladder
I have three of these bamboo ladders which are used to display magazines. They work better and are more imaginative than an ordinary magazine rack. They would look as good in your bedroom with scarves or throws hanging from them or used as a towel rack in the bathroom.

Tuesday is Recipe Day. On Tuesday’s i’m going to post something i’ve personally made which has been worthwhile and very tasty. If you love cooking with herbs you’ll love this one. What do you do with leftover herbs you don’t want to waste or fresh ones from your garden?
HERB BUTTER
8 tbsp. unsalted butter, softened
1/4 cup extra virgin olive oil
1 tbsp. lemon juice
1 tbsp. chopped shallot
1 tsp. chopped garlic
1/4 cup chopped parsley
1 tbsp. each chopped chives, sage, thyme and tarragon
Mixed Herb Butter
Place all ingredients in a food processor and blend. You can also freeze this butter and use as needed not only on breads but corn, rice & pasta. The recipe can also be varied. For instance I made a cilantro, lime & chili butter for corn on the cob – yummy!
I’ve been collecting coffee mugs from different countries for a while now. Every time I drink out of one it feels a bit exotic & reminds me of the place visited. What about you? What happens when a handle breaks, they get chipped or cracked on the inside but you still want to enjoy them?
Here’s an idea for your no longer of use coffee mugs. Planting an herb or flower makes them useful again and looks so pretty.
