A pleasurable daily Dog Walk at River Walk in Palm Springs
Sometimes it’s nice to do nothing
Why shouldn’t vegetarians get to enjoy ceviche too?
That’s exactly what I was thinking after sampling a delicious veggie ceviche on an appy menu at the Trio restaurant in Palm Springs. I almost phoned them for the recipe but then it dawned on me – why don’t I just make it my usual way but substitute using tofu instead of white fish? Here’s how:
Cut a block of extra firm tofu (in the package) into half lengthwise and then into 1 cm. cubes. Place in a pyrex dish and add enough fresh lime juice to cover the entire thing – about 6 regular size limes in total. Cover with plastic wrap & leave sit in fridge for about 4 hours, then discard juice and add the following items to same dish:
*Cut up the following into roughly the same size pieces except for the jalapeño which should be seeded & finely chopped :
1 cup of grape or cherry tomatoes
1 small red onion
1 small jalapeño
handful of fresh Cilantro
Kalamata black olives
1 not overly ripe Avocado
1 not overly ripe Mango
2 Tbsp. extra-virgin olive oil, course salt and black pepper to taste.
Serve with sliced lime for extra tartness & tortilla chips.
*I also had a side of tomatillo/avocada salsa. Rave Reviews!

Bob Hope’s legendary Palm Springs mansion has gone on the market for an eye-watering $50m. It is the most famous property owned by the legendary comic, who was extremely passionate about architecture.
No wonder he was so cheerful – the entertainer was often cited as the biggest private landowner in California. Bob Hope had this house built in Palm Springs but never actually moved into it. The house he lived in was much more modest. If you can afford it and love living large then there’s a lot of HOPE for this house.
The futuristic California home was designed by renowned Modern architect John Lautner especially for the funnyman and his beloved wife Dolores. The concrete, steel and glass house was built in 1979 and has about 22,000 square feet of living space, and its unique design is somewhat reminiscent of the USS Enterprise.Buyer’s will get to boldly go where no-one except the Hope family has gone before.
Books are some of my favorite things.
More and more people are using a kindle but there’s nothing
like turning the pages of a book. I’ve always fantasized about having a library. My friend Natalia has built an enviable floor to ceiling library in her house in L.A. – if only I had the space. I go into stages of reading and not reading and have many books to catch up on. My friend Louise recently gave me the book “A New Earth” by Eckhart Tolle which I’ve wanted to read for the longest time. I must be the last person on the planet to be reading it. Here are a few coffee table types that recently caught my eye – from and about Palm Springs.
